Buck Wilmington Pie

Ingredients
      One 9-inch Graham Cracker piecrust
      3/4 cup granulated sugar
      1/4 cup golden brown sugar
      3/4 cup butter, softened
      A splash of pure vanilla extract
      3 squares (total 3 ounces) unsweetened chocolate, melted and cooled
      3 large eggs
      1 cup chilled whipping cream (optional)
      2 tablespoons powdered sugar (optional)
      1/4 cup semi-sweet chocolate curls (optional)

Beat granulated sugar, light brown sugar, and butter in 1-1/2 quart bowl until light and fluffy. Stir in vanilla, cream of tartar, and chocolate. Beat in eggs — one at a time — until light and fluffy. Pour into pie shell. Refrigerate until set (approximately 3 to 4 hours. Yes, Buck is worth the wait).

For optional topping: beat whipping cream and powdered sugar in chilled 1-1/2 quart bowl until ... stiff.  Top pie ... with an enticing layer of whipped cream and a generous moustache of chocolate curls.  Immediately refrigerate any remaining pie.



Yield: 7 magnficent servings.
